Pineapple Salsa

IMG_4977The past couple of weeks have just been crazy… crazy awesome!

First we had my stepsister Ann and her boyfriend Jordan out to visit us. We had such a blast with them going to fun restaurants on the water, rooftop drinks and of course we had to throw a little Disney in there.

IMG_4839Needless to say it was a busy few days, but so fun and great to spend time with them.

Birthday Extravaganza

The following weekend was my birthday and my husband Tom had been trying to keep quiet for weeks… Apparently he had a few surprises for me (we both are really bad at surprises!). All he told me was to pack a bag for a night.

Hmm…

Turns out, it was a wonderful weekend! We went out with my mom and stepdad first in Orlando for a little outlet shopping and dinner at this restaurant I’ve been dying to try called Moonfish. Super yummy sushi and  wood-fired oysters.

Yum!IMG_4904After dinner Tom and I left and everything started to look familiar as we pulled into Disney’s Caribbean Beach Resort – which is where we stayed when we got married in Disney back in October. It was such an amazing surprise as it’s a special place for both of us.

We then proceeded to hop on the Disney shuttle and head over to Magic Kingdom for some fireworks. We ended up getting there watching fireworks for a few minutes and then shooting over to Pirates of the Caribbean ride (my absolute favorite!).

The next day (Saturday) we spent in Magic Kingdom doing as many rides as possible, having lunch at Be Our Guest, and by that time we were pretty much pooped.  The rest of the day we spent recovering and just hanging out.

On Sunday we were invited to out friends house for a little beachside lunch and when we got over to their house…

I walked in and our friend Kim made me the most badass pirate ship cake!!!IMG_4951 (1)Not just any pirate ship – it was The Flying Dutchman from Pirates of the Caribbean!!! Have I mentioned how much I love Pirates! Haha…

It was the most amazing cake I’ve ever had in my life! Seriously that girl is talented 🙂

Anyways, I feel so lucky. I had the best birthday that a girl could ask for with my amazing husband, family and friends.

Absolutely perfect!

Family Time

So back to the salsa story….

Just this past week we went to visit my aunt and uncle down in Hobe Sound, Florida. My other aunt and uncle and my cousin Daniel were coming down to spend spring break with  them… So I decided to make some yummy snacks to bring to the visit.

It has been getting hotter in Florida and we were going to be poolside all day so I thought we needed some light and refreshing snacks.IMG_4995Why not Pineapple Salsa?

I’ve been wanting to make this for a while and I’m so glad I did…

This pineapple salsa is the perfect combination of sweet, spicy, and extremely fresh. Better yet, you can make this the night before and just refrigerate.

On these warmer days approaching, this is something I will be craving – something super flavorful, light and crisp… Perfectly paired with a margarita!IMG_4976 (1)

 Ingredients:

2 cups fresh pineapple, diced
1/4 cup red onion, finely diced
1/4 cup fresh cilantro, chopped
1 jalapeno, finely chopped (keep seeds in if you want extra hot, I did about half)
1 garlic clove, mince
juice of 1 lime
salt

Directions:

  1. Using a medium bowl combine pineapple, red onion, cilantro, jalapeno, garlic and lime juice.
  2. Stir until everything is incorporated.
  3. Then add salt to taste.
  4. Refrigerate for at least 30 minutes before serving.

Tip: A few delicious ways to use this salsa are on tacos, grilled fish or chicken, and of course with some warm tortilla chips.
