Garlic Thyme Filet Mignon with Sautéed Mushrooms

We all have different traditions around Christmas whether that is a Turkey for Christmas dinner or a honey ham… or maybe you want to switch things up since you might have a smaller group this year – this Filet Mignon with sautéed mushrooms might just be the perfect meal for that! 🙂

This Filet Mignon is a meal that all will leave an impression and all will absolutely love!  Now I don’t know about you but I used to get intimated by cooking any kind of steak but this method of searing and then placing in the over is really simple and comes out perfect.

I made these filets last year for my family and needless to say it was a hit and has been requested once again for this Christmas Eve.

I love to pair mine with a great glass of red wine and my mushroom risotto (included in my 12 Recipes of Christmas)… legit melts in your mouth! haha just saying its a must in this house!

Filet Mignon Ingredients:

2 6-oz filet mignon
1 tbsp unsalted grass fed butter
2 garlic cloves
8 oz. baby bella mushrooms
Kosher salt
a few sprigs of fresh thyme
pepper

Directions:

  1. Preheat oven to 425°.
  2. To prep the steaks, remove from fridge about 30 minutes before cooking. Rinse off steaks and pat dry. Season all sides really well with salt and pepper.
  3. Heat oven-safe skillet or cast iron add 1 tbsp butter on high heat. Once pan is hot, add steak and sear for 2 minutes, then flip and sear for another 2 minutes. Add garlic cloves and a few sprigs of thyme to the pan while searing second side, tilting the pan and spooning liquid over the steak. Place pan into the oven for 6-7 minutes (for medium doneness), or until cooked to your desired temp.
  4. Remove from oven. Set steak on cutting board and let rest for 5-7 minutes.
  5. In the meanwhile, you’re going to cook down the mushrooms. Add mushrooms to hot pan or skillet. Cook until all the water/liquid is cooked out and mushrooms are nice and sautéed. Season with salt and pepper.
