Garden Fresh Bruschetta

Any opportunity to have really fresh and delicious food, I’m all about it – especially living down in Florida where the summers can get pretty brutal!
I never really want anything heavy to eat when its that hot, so it’s great to have these light, flavorful and delicious go-to recipes that will fill you up without being too rich.
This garden fresh bruschetta is very easy to make, healthy and an all-around great summer snack. It pairs great with crostini, tortilla chips or even on top of grilled chicken!
Having smart choices like this can really help you stay on track if you are on a fitness program or just want to lead a healthy lifestyle… You just have to be careful of the serving size of the chips, crackers or anything you’re using to dip (unless it is veggies).
Ingredients:
5 roma tomatoes (or 1 container of grape tomatoes), diced
1 garlic clove, minced
1/4 cup fresh basil, chopped
2 tbsp. olive oil
salt and pepper to taste
Directions:
- In a medium bowl, combine all ingredients. Stir to fully incorporate.
- You can serve immediately or place in the fridge for 30 minutes or so (I like to do this – the flavors tend to be more pronounced).
- When serving, you can scoop onto chips and crostinis, or even make your own: start by taking a fresh baguette and cutting thin pieces, then brush each side with a mixture of olive oil and fresh garlic.
- Finish by placing them on a baking sheet and bake at 350° for a few minutes on each side (just until crispy).
