Breakfast Quiche with Canadian Bacon and Cheddar

So you have all you cookies done and christmas dinner all planned but what about Christmas morning breakfast??

Growing up it’s always been a tradition in our house to have Christmas morning brunch… it was always something my sister and I look forwarded to! Coming down in the morning to the tree with presents all around and under it and smelling the delicious food cooking in the kitchen! (if only they could put that into a candle lol)

Probably one of favorite memories 🙂

This breakfast quiche with canadian bacon and cheddar is so delicious and savory I mean you have the smoky canadian bacon with a perfect cheddar all melted into an egg mixture with a buttery crust…mmm so good!!!

TIP: Sometimes things are just so crazy and you have a ton of things to make so in this recipe I used packaged puff pastry  for the crust and it turned out beautifully and super easy (we can all appreciate that this time of year!).

Breakfast Quiche with Canadian Bacon and Cheddar Ingredients:

2 eggs
1 cup egg whites
½ cup 2% milk
6 slice Canadian bacon diced
¾ tsp salt
¼ tsp pepper
1 tsp mustard
½ cup shredded cheddar cheese, (¼ cup in quiche, ¼ cup on top)
1 bunch chives chopped
1 sheet of puff pastry (½ of a box)

Directions:

  1. First thaw out puff pastry sheet according to packaging instructions. Preheat oven to 350°. Once thawed, roll out with a little flour into a round shape to fit your pie/quiche pan.
  2. Place puff pastry in the pie pan, gently, making sure you leave some crust up the sides and fold over so it doesn’t fall during the bake.
  3. In a medium mixing bowl add eggs, egg whites, milk, diced Canadian bacon, salt, pepper, mustard, ¼ cup shredded cheddar, and ½ the amount of the chopped chives. Whisk together until fully combined.
  4. Pour into prepared puff pastry in pie pan, top with remaining cheese and sprinkle with chives. Place into the oven for 35- 40 minutes or until egg is fully cooked and crust is golden brown.
