These cookies came about one night when my fiance and I needed a sweet fix and popcorn and m&ms sounded like a great idea!
2 cups plus 2 tbsp. all purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
12 tbsp. unsalted butter softened
1 cup brown sugar, packed
1/2 cup granulated sugar
1 large egg plus 1 egg yolk
2 tsp. vanilla extract
2 cups M&M’s
Preheat over to 325°
First you want to get everything together you will need to make popcorn. You can use microwave popcorn if you wanted to ( my mother my would kill you though it is against everything she believes in! ). Anyways you can do it either way. I have to say… homemade may take a little longer but is totally worth it!
So you will need a pot or a popcorn maker. Then you will need to cover the bottom of the pot with vegetable oil. I usually heat it and throw one kernel in until it pops then you know it is ready. Pour in popcorn kernels to cover the bottom of pan. Cook until done.
When popcorn is done transfer to bowl and melt about 1/2 stick of butter and pour over popcorn and shake bowl to evenly distribute. Then salt to taste and shake again ( yes you should try some).
Make sure to line your cookie sheets with either parchment paper or silicone liners (which are amazing!).
Whisk the dry ingredients in a medium bowl and set off to the side.
Then mix the butter and sugars together with electric mixer until combined. Then beat in egg, yolk and vanilla. Add in dry ingredients slowly until combined.
Add popcorn and M&M’s.
Next take a 1/2 cup and scoop out cookie dough. Take into your hand and roll into a ball. Separate it in half and place on baking sheet with edges facing up ( don’t roll again).
Place about four on a baking sheet they will spread out a little. Put in oven for approximately 11-14 minutes. They should be soft in the middle and light brown on the edges. I always say its better to be a little under cooked because when you take them out the will harden up.
